I have the original auto-choke carb, but with a manual conversion. I'm not sure that either work that well, as it starts immediately and also runs on when switched off. I'm sure it's running very rich. Any suggestions on an upgrade?

how far are you from Ohio? I could put you in touch with my mate Norm who specialises in uk spec capris. Do a search for Team Blitz Capris

Is there a trick to cold starts with the VV carb, still getting used to mine, I can remember pump once then pull choke out on something Ford but no idea what, mines got a manual choke too.
