Yeah this was the type of thing i meant. I've heard them be called a few different names including 'Dormobile'. Think they were originally built to be used as community buses or parcel vans. The whole 'Dormobile' name now being used to refer to anything with pop up tops is what makes them a nightmare to search for. As you say Curly, a nightmare because most folks use the name they like. Probably the best way is to search for Transits in your price range.
Then set up a search that notifies you of the latest Transits in that range to get on eBay.
If you tell me your price range, and your post code, I'll set a search for you if you wish.
One thing though, have you talked to your local council about the regulations concerning Mobile catering please?

'Dormobile' started off converting vans in the 50s Fred. As they got established, and once large fibreglass panel could be moulded, they branched out into parcel cans, ambos, coach built motorcaravans, etc.
If Jo Blogs wanted a Transit van converted to carry a wheel chair, I've little doubt Dormobile would have been glad of the work.
What does your parcel van look like please Fred?

With a full compliment of seats, it would have been a coachbuilt minibus.
Without seats behind the driver's, it would have been a parcel van.a2ecommercials.webs.com/photos/Buses-and-Coaches/AFTER.JPG

It is a minibus. No wheelchair tracks (odd given the lift) but has factory windows. I am 99% sure she was a sunshine bus.

Thinking about it, in those pre-HSA Gestapo days, they probably just wheeled the chair in. Were there loading rings for straps? What do you mean by 'factory windows' please?

factory windows are fitted in a recess as opposed to after market which fit on the panel. The bus has a doble skin oo.

Double skinned eh? What's between them please?

Factory means from new construction, be it Ford or Dormobile. I think she just has a air gap between the skins

It could/should have some expanded polystyrene between the two Fred.
Cheaper, lighter, and stronger. And very nice for a camper/cook 'ouse conversion.
